Filipino Chicken Adobo

Ingredients

  • 1.5 pounds Woodbridge chicken thighs

  • 3 garlic cloves, minced

  • 1/3 cup white vinegar

  • 4 fresh bay leaves or 3 dried

  • 2 Tbsp oil, split for cooking

  • 3 garlic cloves, minced

  • 1 small onion, minced

  • 1 1/2 cup water

  • 2 Tbsp brown sugar

  • 1 Tbsp whole peppercorn or 2 tsp coarse black pepper

  • (optional garnish) 2 green onions, sliced

Directions

Marinade

  1. Combine; Chicken thighs, 3 minced garlic cloves, soy sauce, vinegar, and bay leaves. Leave to marinate 20 minutes.

    Cooking

  2. Heat 1 Tbsp oil in cast iron pan heat on high. Remove chicken thighs from marinade and sear both sides of thighs until brown about one minute each side. Set chicken aside.

  3. Heat remaining oil in pan, add garlic and onion cook for 1 1/2 minutes. Add marinade, water, brown sugar and pepper. Bring to a simmer. Turn heat down to medium heat heat and simmer for 5 minutes.

  4. Add chicken thighs back into the pan, simmer uncovered for 20 to 25 minutes. Turn chicken thighs over at the 15 minute mark. Reduce the sauce until thick.

    Note: If sauce won’t thicken remove chicken and allow the sauce to simmer until thick.

  5. Serve over steamed rice.
